These recipes are delicious and easy to prepare ahead of time and freeze.
Ice Cream Cake
1/3 cup butter, melted
26 oreos (or chocolate sandwich cookie) crushed
Half a gallon of your favorite ice cream, softened
2 Cups whipped cream (or 8 oz. of Cool Whip)
Mix Oreos and butter and press into the bottom of a 9 by 13 inch pan. Freeze for 20 minutes
Take out and spread softened ice cream over crust. Freeze for 20 minutes
Take out and carefully spread fudge topping on top of ice cream. Freeze for 20 minutes.
Take out and spread whipped cream (and 2 crushed Oreos, if desired) over top.
Cover with foil or plastic wrap and freeze until ready to use.
Breakfast Yogurt Parfaits
These are similar to the ones McDonald’s sells. I use clear hard plastic cups and cover the tops with a tight sealing plastic wrap and then freeze. If you use homemade yogurt in these they cost very little to make.
These are a healthy snack or breakfast. If your family balks at plain yogurt add some maple syrup or honey. Yummy!
You will need:
Clear plastic cups
Tight sealing plastic wrap
small baggies (I use the little snack baggies that press and seal)
berries, frozen or fresh (using both a red berry and a blue or black berry makes these very pretty)
plain or vanilla yogurt
granola, coconut, nuts or any crunchy topping you like.
In a clear plastic cup layer yogurt, red berries, yogurt, blueberries until the cup is almost full.
Fill a small plastic baggie with the crunchy topping.
Cover the cup with tight sealing plastic wrap. Using a rubber band, attach the baggie with topping and a small plastic spoon to the cup. Freeze.
These can be eaten slightly frozen or thawed.
